DeWolf Brewing Company, Victor NY

DeWolf has a very large, modern building and this is only the main entrance — there’s a lot more to it off both sides of this photo. It’s tucked back in along railroad tracks so if you don’t already know where you’re going (which is why I check satellite views on the maps first) you’re likely to miss it; the parking lot entrance could use a good sign!

Again, this is just a small section of the interior. The bar itself is quite large and there are a lot of high-top tables both in the part you can see here as well as behind, and there’s another large room as well that is probably intended for overflow or parties, plus an outdoor space. They have a good variety of beer styles, all brewed on site, and an interesting food menu much of which is inspired by food from Barcelona. I started with this flight, described left to right:

Good as Gold – New Zealand Pilsner, 5.6% – I didn’t realize NZ Pilsner was a thing, but this was easily my favorite of the eight beers I sampled! It was fruity and refreshing, eminently interesting, and thoroughly drinkable. I’d order this again in a flash.
Primavera – Saison, 7.0% – I couldn’t quite come to terms with this beer but it may have been my second favorite. There was definitely a good Saison flavor although it seemed very mild on the initial taste and got stronger in the aftertaste, which is when an interesting bitterness came for a visit. It was really interesting, but I don’t honestly know if I’d want more, especially with that fine NZ Pilsner available.
Monarch – Mexican Lager, 5.0% – I chose this only because the Cream Ale had kicked and been replaced by a Seltzer. It was good, but ever so slightly heavier on the corn flavor than I would have liked, and it was very dry on the back end.
Zlatý – Czech Pilsner, 4.8% – I normally love this style, but while this was very good in its own right, the interesting character of the NZ Pilsner won me over and knocked this down to 3rd place (maybe 2nd).

According to the menu, this is a “Guest Favorite” and I can sure see why. The burger is a smash burger with onions, roasted pork, muenster, BBQ sauce, and roasted red pepper aioli, and it was a fabulous blend of flavors that didn’t get old as I ate it. On the left is their Potatas Bravas, a Barcelona dish of crispy potatoes topped with roasted garlic aioli and romesco (a tomato-based sauce from Catalonia), topped with fresh herbs. Again, these were splendid, just spicy enough for me without being too spicy.
And here is the second flight, left to right:

Umbra – Cascadian Dark Ale, 5.0% – I’m not sure what “Cascadian” brings to this style; it seemed like just a dark ale, quite mild, but with a light bitterness on the back end. It was intriguing but not my favorite.
Cashmere Tanktop – Pale Ale, 5.0% – Isn’t this a great name? There were certainly melon and citrus flavors in this with some bitterness, but not too much. It was good and I wouldn’t mind more of it although the NZ Pilsner still topped this one for me today.
Day One – Hazy IPA, 6.5% – Their other two IPAs were West Coast style so I wasn’t surprised that I wasn’t head over heels for this one. It was good, but not completely to my liking.
Double Track – Double IPA, 9.8% – I love a good DIPA but this one didn’t do it for me — it was very bitter and the alcohol was prominent rather than sitting in the background.
On the whole, I was pleased to find DeWolf Brewing and may look for an opportunity to visit again on another trip. The beer was very good, but the food? Absolutely wonderful!
